Serves 10 servings

To make the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Place all the items into a pot, heat until it reaches a simmer, mixing to dissolve. After that, remove from the heat allowing it to cool down entirely. Transfer into a sealable bottle, close it and store in the refrigerator, where it will keep for around one month.

For the Batch Mix: Mix all the liquid ingredients in a large bottle, let it rest for one hour, then pass it through best through muslin, making it perfectly clear.

When ready to serve: Add 85ml from the premix to a mixing glass filled with ice, and agitate carefully for about 60 seconds to cool it down. Pour to a chilled martini glass or similar, decorate with some cranberries adding the final touch with a brief mist of mandarin oil over the drink.
